Crystallization of polymethoxyflavones in high internal phase emulsions stabilized using biopolymeric complexes: Implications for microstructure and in vitro digestion properties

Polymethoxyflavones (PMF) are a group of flavonoids isolated from citrus peels that show crystallization properties. The purpose this study was to investigate the impact PMF on microstructure, stability and bioaccessibility PMF-loaded high internal phase emulsions (HIPE) stabilized using protein polysaccharide complexes. To improve loading capacity PMF, HIPE biopolymeric complexes developed as container for at concentrations ranging 1 4%. At supersaturation, low-density crystals remained dispersed throughout while high-density formed three-dimensional network disrupted oil-in-water interface. Based microstructure rheological studies, density affected storage temperature significantly influenced PMF-containing system. simulated lipolysis showed crystalline in protein-polysaccharide lower than solubilized indicating dissolution could affect their with digestion conditions. conclude, crystal formation lipid-rich delivery system during storage, well condition.
